This genus has been in cultivation for more than 9000 years with its predecesors' up to 12,000 years ago. The Aztec civilization extended the grains natural range so it became available to most of North America by the 1200 A.D. This means there is a large number of varieties even though modern farmers only use a few. These are distinguished by subspecies, which is determined by the amount of starch contained in the kernels.
